My daughter and I flew to the US to visit my mother last week, and apart from the fact that our flight was diverted 15 minutes AFTER we were supposed to land due to bad weather, and we sat on the tarmac for over 2 hours in a stuffy plane before we were cleared to continue the journey, and our 3-hour trip took 9 hours, we had a pretty good time.
We enjoyed the non-stop sunshine.
We shopped.
(A lot.)
I slept more than 5 hours each night.
My daughter spent some quality time with her Gran.
We set up a sprinkler on the driveway.
And even though I was eager to get back to my husband, my home, and our normal routine on Saturday, the end of our trip was a bit bittersweet for me as it was probably the last time we’ll visit my mother in the US before she sells her house.
Now, if you’ve ever met me in real life, you know I have a tendency to be emotional and sentimental, and while I would’ve liked to blast my dad’s favorite tunes and throw myself a pity party on our last day, I owed it to my daughter (and my dad) to end the trip on a positive note. So we spent the morning at a HUGE waterpark, and when my mother asked what we were going to do with all of the leftover vegetables in her fridge later that afternoon, I decided to do something a little out of the ordinary and organized an indoor picnic with my daughter.
We setup a picnic blanket on the living room floor.
We loaded our favorite Peppa Pig disc into my mother’s DVD player.
We poured everyone a glass of ice cold lemonade.
And although my daughter was less than pleased when she learned toaster waffles weren’t on our picnic menu, and kicked up a fuss when she saw the spread of vegetables I had prepared, she completely changed her tune when she tasted the best fat free ranch dip recipe I’ve EVER made. In fact, I think she ate more vegetables that afternoon than she has in her entire 4 years.
I’m serious!
And since I know I’m not the only parent out there who struggles to get her child to eat vegetables, I thought I would share my recipe with you. It’s simple to make, perfect for summer parties, and I have yet to find a child who doesn’t like it.

INGREDIENTS
-3 large bread rolls
-1 1/2 cups nonfat plain Greek yogurt
-1 package of Original Ranch® Hidden Valley® Greek Yogurt Dips Mix
DIRECTIONS
1. Mix Greek yogurt and package of Original Ranch® Hidden Valley® Greek Yogurt Dips Mix together and refrigerate for 1-2 hours to thicken and enhance flavors
2. Cut top off bread roll and remove inside inside (feel free to keep excess bread for dipping!)
3. Add dip mixture to bread bowls
4. Serve with fresh cut vegetables
