We didn’t eat a lot of desserts when I was growing up.
Actually, that’s not entirely true.
There always seemed to be an endless supply of mincemeat pies and trifle hanging out in our fridge, but since I don’t enjoy either of those things, it felt like we never ate dessert.
But every once in a while, when the mood struck her, my mother would make something delicious like her famous lemon loaf, and it would take all of my strength and willpower not to eat the entire thing in one sitting.
This loaf is simple to make and tastes delicious with butter and a spot of tea. Enjoy!
Simple Lemon Loaf
Ingredients
- 6 tablespoons butter
- 1 cup white sugar
- 2 eggs
- Zest of 1 lemon
- Juice of ½ lemon
- 1½ cups flour
- 2 teaspoons baking powder
- Salt
- ½ cup milk
Instructions
- Cream butter and sugar together
- Add eggs, zest of lemon, flour, baking powder, and salt
- Add milk to mixture
- Bake 1 hour at 325F
- While hot, cover with lemon juice and sugar
