My dad traveled a lot when I was a kid, so any time I got to spend with him was pretty special. Whether we were reading, trying to figure out my math homework, or walking over to MacDonald’s for a quarter pounder after dinner (shhhhh, don’t tell my mum we used to do that), we always had a good time together. He was such an easy-going guy who loved to tell jokes and laugh, and while his culinary skills weren’t the best, his 4-ingredient rice pudding was absolutely delicious.
This recipe is easy to whip up when you’re craving something sweet, and it’s the perfect dessert for cold winter nights when you want to curl up on the couch with a good book and a glass of white. I hope you enjoy it!
- -1½ ozs rice
- -2 ozs sugar
- -1 pint milk
- -Ground nutmeg
- Heat over to 300F.
- Wash rice in a sieve, mix with sugar and milk, and place in greased, oven-proof dish.
- Sprinkle top with nutmeg.
- Bake for 2 to 2½ hours, stirring once or twice.
