I like to think I’m good at a lot of things.
Cooking is not one of then.
But I like to eat.
I LOVE to eat.
And since we can’t afford to get takeout every night, and I gave birth to the pickiest eater known to mankind, I have had to find creative ways to make the dinner hour as stress-free as possible so I don’t totally lose my mind each day.
We listen to music.
We talk about the things my daughter learned at preschool.
We watch our favorite Sesame Street celebrity music videos on YouTube.
We read books.
We invite my daughter’s Minions (should that be capitalized?) to eat at the table with us.
And on the nights when we’re all tired and cranky after a busy day, I find something quick and easy to make, throw on Despicable Me, and we enjoy a family picnic around our coffee table.
It’s pretty awesome.
Of course, finding a simple recipe we’ll all enjoy isn’t always easy, but thanks to the Cook with Campbell’s website, I can search for ideas based on whatever ingredients I have on hand, and I have never been disappointed with any of the recipes I’ve tried.
They really are Simple to Make, Easy to Love!
I tried the Chicken and Broccoli Alfredo recipe a couple of nights ago, and it was to die for. It only took 30 minutes to prepare and cook, and it was so delicious my husband almost asked me to marry him all over again.
I’m definitely adding this to my weekly meal rotation!
-10 oz (284 g) fettuccini
-3 cups (750 mL) broccoli florets
-2 tbsp (30 mL) butter
-4 (750 g) boneless, skinless chicken breasts, cubed
-1/4 tsp (1 mL) salt and ground black pepper (each)
-3 cloves garlic, minced
-1 can (284 mL) CAMPBELL’S® Condensed Low Fat Cream of Chicken Soup
-1/2 cup (125 mL) 1% milk
-1/3 cup (80 mL) sundried tomatoes, chopped
-2 tbsp (30 mL) fresh basil, chopped
-1/4 cup (60 mL) parmesan cheese, grated
1. Cook fettuccini according to package directions, add the broccoli during the last 2 minutes of cooking, drain and set aside.
2. Heat butter in a large skillet over medium-high heat, season chicken with salt and pepper, and cook, stirring often, for 5 minutes (or until golden brown).
3. Add garlic and cook for 1 minute or until fragrant.
3. Add soup, milk, and fettuccini with broccoli and cook, stirring often, until heated through.
4. Stir in sundried tomatoes and basil.
5. Serve with parmesan cheese.
