When my husband broke the news that he would be out of town a couple of weekends ago, I initially intended to use the time to knock some stuff off my ever-growing to-do list. I don’t know if it’s the cold weather, the lack of Vitamin D, the fact that it’s still dark when we wake up in the morning, or a combination of all 3, but I have been seriously unproductive lately, and if I don’t chain myself to my desk for 3 straight days sometime soon, I’m going to be in serious trouble.
But I’m trying really hard to have a better balance in my life, and while I’m sure I would’ve had a blast spending my Saturday night sorting through my expenses, I decided to give my gal pals a call to see if I could interest them in a night out instead.
The plan was to meet here, have a couple of beverages and appetizers while we made ourselves look beautiful, and then hit the town, but by the time everyone got their kids to bed and made it to my place, none of us had the energy to go anywhere.
We’re much too old and sensible to be venturing out in dresses and high heels in the middle of winter when we can hang out in our beloved yoga pants instead.
So we did what we always do when we get together: we made some yummy food and binge-watched Suits on Netflix, all the while arguing whether Harvey Specter is sexier than Mike Ross.
(Spoiler alert: regardless of what my gal Meredith says, Harvey wins every. single. time.)
Of course, I wasn’t prepared to cook dinner for myself that night, let alone 5 other hungry girls, but after surveying the contents of my fridge and pantry, I realized I had everything on hand to make my yummy Parsley Cannelloni.
This recipe was a family favorite when I was growing up. It’s the perfect comfort food for cold winter nights, makes a great dish to take to parties and pot luck dinners, and thanks to the wonderful folks from ConAgra Foods, who make the most delicious tomato sauce, I can whip this up in next to no time.
The original recipe my mother used when we were younger was made with crepes, but I’m all about making my life as simple as possible, especially when Harvey Specter is waiting for me, so I used store-bought cannelloni noodles instead and it was a real hit.
Now, I know I’m not the only gal out there who is forever looking for quick, easy, and delicious recipes that are suitable for entertaining guests, so today I’m teaming up with ConAgra Foods to share this amazing recipe that has become a staple in our household during the winter months.
- 1 packet cannelloni noodles
- 500 mL (16 oz) container cottage cheese
- ½ lb (225 g) grated mozzarella cheese
- ⅓ cup Parmesan cheese
- 2 eggs
- 1 tsp salt
- ¼ tsp pepper
- 1 tbsp chopped parsley
- ¼ cup grated Parmesan cheese
- 2-3 cups Hunt's tomato sauce
- Combine all ingredients except the ¼ cup Parmesan cheese and tomato sauce and beat with a wooden spoon to blend well
- Cover the bottom of a casserole dish with tomato sauce
- Fill each uncooked cannelloni noodle with filling and place in casserole dish, making 2 layers in necessary
- Top with tomato sauce and sprinkle with remaining Parmesan cheese
- Bake at 350F for 30 minutes
