Peanut butter is one of my most favorite things in the whole wide world. I like it smothered over toast in the morning, on top of a banana or apple in the afternoon, and often eat it directly out of the jar while I’m catching up on my favorite shows on Netflix at night, and while I feel it’s a great pre- and post-workout snack as it’s packed with protein, this little addiction of mine is getting more than a little out of control.

At least, that’s what our bathroom scale recently told me.

So when I saw a display of PB2 (powdered peanut butter) at the grocery store, I knew I had to give it a try. PB2 is made by slow-roasting peanuts and then pressing them to remove 85% of the fat and oil they contain, and even though I’m a big proponent of eating foods in their natural state in an effort to reap all of their nutritional benefits, I was so excited at the prospect of guilt-free peanut butter that I threw THREE containers of it into my cart.

It took a little bit of practice to get the right powder/water ratio, and the taste was definitely no match to the delicious, velvety-smooth natural peanut butter I buy at our local health food store, and I was beginning to think my 3-container purchase had been a bust.

But then I saw a jar of CHOCOLATE PB2 on my next grocery store visit, and while I was enjoying my third serving of it later that evening, I had the brilliant idea of searching for healthy PB2 recipes on Pinterest.

And the rest, as they say, is history.
